Trout on Lowveld menus, raised in the Highlands

Mbombela is the capital of Mpumalanga and calls itself the Gateway to the Lowveld. It sits on the Crocodile River, it is known as Citrus City, and it is a major stopover for visitors heading to the Kruger National Park. Those visitors, and the people who live here, eat in Mbombela's restaurants and shop in its delis. Stillriver Trout supplies those kitchens and counters with fresh and smoked trout from our farm near Dullstroom.

For a Lowveld kitchen, trout is a useful fish to have. It is local to the province, it is not the same salmon everyone else serves, and it suits both a light lunch menu and a plated dinner.

What we supply to Mbombela

Fresh trout

Whole fish and fillets for restaurants, butchers and fish counters. Because we grow the fish ourselves, we can tell you the size, the harvest date and how it was handled. Details are on the wholesale trout page.

Smoked trout

Cold-smoked ribbons for platters, breakfasts and salads, and hot-smoked fillets for pate, pasta and quiche. Smoked trout travels sealed and chilled, which makes it the easier product for shops and delis further from the farm. See smoked trout, and for menu ideas, smoked trout recipes.

Why we do not sell fingerlings for most Lowveld dams

We get asked this often, so here is the straight answer. Trout are cold-water fish. Mbombela has a humid subtropical climate with hot summers, and in our view most dams in the Lowveld get too warm for trout to survive the summer. Warm water holds less oxygen, trout stop feeding as the water heats up, and a hot spell can kill a whole stocking.

We would rather lose the sale than sell you fish that will not last. If you have a dam in the Lowveld and want fish in it, ask about species suited to warmer water from a supplier who specialises in them. If you have a property up in the Highlands as well, that dam may be a different story: read about stocking trout in dams.

How Mbombela orders work

  1. Tell us what you need

Product, rough volume and how often. A weekly standing order and a one-off event order are both fine.

  2. Get the price list and run

We send the current wholesale prices and the delivery run that serves Mbombela.

  3. Delivery, kept cold

Fresh fish travels chilled. Smoked trout arrives sealed. Get both into the fridge as soon as they arrive.

What drives the price: the product, the volume, how often you order and whether your delivery fits an existing run. Ask for the current price list, or use the order form.

Getting trout down to the Lowveld in good condition

Mbombela is reached along the main toll road that runs from Pretoria through the Highlands towards Maputo, so our deliveries come down from the cooler country above. The trip ends in a warmer place than it starts, which is why cold handling matters so much for Lowveld buyers.

Fresh fish travels chilled and should go onto ice or into the coldest part of your fridge as soon as it arrives. Smoked trout arrives sealed. If your kitchen does not have much cold storage, smaller and more frequent deliveries of fresh fish, with smoked trout as the steady stock item, often work better than one large order. Tell us your storage space and how quickly you sell through, and we will suggest an order pattern that keeps waste down.

Lodges near the Kruger and guest houses on the tourist routes are welcome to ask too. Trout from the Highlands is a natural fit for a Mpumalanga menu, and smoked trout on a breakfast or lunch platter needs very little kitchen time. If you want to see where the fish come from, the farm is open for farm visits by booking.

Questions from Mbombela buyers

Do you deliver trout to Mbombela?

Yes. Fresh and smoked trout go to Mbombela on scheduled delivery runs from our farm near Dullstroom. Restaurants, delis and shops can set up a standing order or order for a single event. Message us on WhatsApp with what you need and how often, and we will confirm the run and the price.

Can I stock trout in my dam in the Lowveld?

In most cases we would advise against it. Trout are cold-water fish, and Mbombela has a humid subtropical climate with hot summers. Most Lowveld dams get too warm and too low in oxygen for trout to survive the summer. Our guide on why trout die in dams explains what goes wrong.

What is the difference between cold-smoked and hot-smoked trout?

Cold-smoked ribbons are silky and mild, the kind you lay over a bagel, a salad or a platter. Hot-smoked fillets are cooked through, flaky and firmer, and work well in pate, pasta and quiche. Many kitchens keep both. See smoked trout for the full range.

How much is trout per kg?

It depends on the product, the volume and how often you order. Whole fish, fillets, cold-smoked and hot-smoked trout are all priced differently, and a regular standing order is priced differently from a one-off. Ask for the current wholesale price list and we will send it with delivery details for Mbombela.

How should fresh trout be stored when it arrives?

Keep it cold from the moment it arrives. Fresh trout has a shelf life of 10 to 14 days on ice, so get it into ice or the coldest part of your fridge straight away, and use it in order of delivery. Smoked trout should stay sealed and chilled until you open it.
