Wholesale trout for the capital
Pretoria is South Africa's administrative capital and the central part of the City of Tshwane, where national government departments have their headquarters, and it has its own busy trade of restaurants, delis and caterers. Stillriver Trout supplies fresh and smoked trout to those kitchens and counters from our farm in the Mpumalanga Highlands, on a scheduled Gauteng delivery run.
Because we raise and smoke our own fish, you get the harvest date, a straight answer about how the fish was handled, and a standing order that stays steady through the year.

Who we supply in Pretoria
Butchers and fish counters
Whole fish on ice for the counter, and fillets for customers who want them ready to cook. Ask about sizes when you order, so the fish match what your customers buy.
Restaurants and hotel kitchens
Fillets and whole fish for lunch and dinner menus. Trout is quick to cook and suits a set menu as well as à la carte. More on the wholesale trout page.
Delis and caterers
Cold-smoked ribbons and hot-smoked fillets for platters, sandwiches, salads and functions. Caterers planning a corporate lunch or a wedding can order for a single date. See smoked trout and our smoked trout recipes for ideas.
How the Pretoria run works
Pretoria shares a scheduled Gauteng run with Johannesburg. A fixed run lets us harvest for the day, keep the fish cold all the way and hold steady prices for regular buyers.
- Standing orders arrive on the same run each cycle, so you can plan stock and menus.
- One-off orders for events can join a run if you give us the date early.
- Storage on arrival: fresh trout onto ice or into the coldest part of the fridge, smoked trout sealed and chilled until opened. Fresh trout has a shelf life of 10 to 14 days on ice.
What drives the price: product, volume, how often you order and how your delivery fits the run. Ask for the current price list, or send an order through the order form.
Why we do not stock dams around Pretoria
Pretoria lies lower than Johannesburg, in a transition zone between the Highveld plateau to the south and the Bushveld to the north, with a humid subtropical climate. Trout are cold-water fish. In our view, Highveld farm dams in Gauteng are usually not a good fit for stocked trout, and the warmer dams around Pretoria are an even harder case.
So for Pretoria we sell trout to eat, not trout to stock. If you also have land in the Mpumalanga Highlands and want fish for a dam there, read stocking trout in dams. Stocking trout is regulated in South Africa, and that page explains what to check first.
Highlands trout, grown in the next province
Most of South Africa's trout is farmed in a few cool regions, and inland Mpumalanga is one of them. Our fish are raised there in cold spring water, then harvested, packed and, for smoked products, smoked at the farm before they travel to Gauteng.
For a Pretoria buyer, that gives you a short, traceable chain. You can ask us the size of the fish, when they were harvested and how they were handled, and get a straight answer from the people who did it. Butchers and fish counters can tell their customers where the trout came from. Restaurants can name the farm on the menu if they want to.
If you would like to see the fish before you order, the farm near Dullstroom is open for farm visits by booking. And if you are comparing suppliers, tell us what matters most to you, whether price, consistency or delivery day, and we will be honest about where we fit. A small trial order is a sensible first step for a new counter or kitchen, so you can see how the fish sell before you commit to a standing order on the run.
Questions from Pretoria buyers
Do you deliver trout to Pretoria and the rest of Tshwane?
Yes. Pretoria is on our Gauteng scheduled delivery run, along with Johannesburg. Restaurants, delis, butchers and caterers can set up a standing order or order for a single event. Send your address, product and volume on WhatsApp and we will confirm the run and the price.
Where can I buy fresh trout in Pretoria?
We supply businesses: restaurants, delis, butchers, fish counters and caterers. If you are a home cook, ask your local deli or fish counter whether they stock our trout, or ask us which Pretoria stockists we deliver to. Businesses can order direct through the order form.
How much is a kilogram of trout?
It depends on whether you want whole fish, fillets or smoked trout, how much you order and how often. A regular standing order is priced differently from a one-off. Ask for the current wholesale price list and we will send it with delivery details for Pretoria.
Is smoked or fresh trout better for a deli?
Many delis carry both, but smoked trout is the easier start. It is ready to eat, it suits platters, sandwiches and salads, and it travels sealed and chilled. Fresh trout suits shops with a fish counter and the cold storage to handle it. See smoked trout for the range.
Can trout live in a farm dam near Pretoria?
In our view, usually not. Trout need water that stays cold and well oxygenated all summer, and most Highveld farm dams in Gauteng do not. Around Pretoria, which lies lower than Johannesburg, that is even less likely. Read stocking trout in dams before buying fish, and note that stocking trout is regulated.
