Trout for sale to the trade, from the farm that grows it
Stillriver Trout grows rainbow trout from the egg in cold spring water near Dullstroom and sells it fresh to restaurants, butchers, delis and retailers in Mpumalanga and Gauteng. Because we raise the fish ourselves, we can tell you its size, harvest date and how it was handled, and we can keep a standing order steady.
If you are looking for a trout supplier with a reliable weekly delivery, this page explains what we sell, how ordering works and what drives the price per kg.
Whole trout
Gutted whole fish, the choice for kitchens that want to cook on the bone, fillet in-house or serve a whole fish to the table. Pan-sized trout, commonly around 280 to 400 g, is the classic single portion. Larger fish give thicker fillets and suit portioning.
Fresh fillets
Fillets, ready to cook. They save your kitchen time and give you a predictable cost per plate, because you pay only for the meat. Tell us the portion you plate and we will match the fish size to it as closely as the current harvest allows.
Smoked trout
Cold-smoked ribbons and hot-smoked fillets from the same fish, made in our smokehouse. See smoked trout for details.

Who our fresh trout suits
- Restaurants and lodges that want a local fish on the menu all year, with the same size each week.
- Butchers and fishmongers who want whole fish and fillets on the counter with a known harvest date.
- Delis and independent retailers who sell fresh and smoked trout side by side.
- Caterers and event kitchens who can plan an order ahead of the date.
Who it does not suit
We are a farm, not a cash-and-carry. If you need a very large national volume, imported fish, or species other than trout, we are the wrong supplier. South African trout production is small and demand is higher than local supply, so we would rather supply fewer customers reliably than overpromise.
We also do not run same-day delivery. Fresh fish goes out on scheduled runs, so orders need to be in before the cut-off for your run.
Choosing the right fish size for your plate
Size is the decision that affects your menu most, so it is worth settling before you compare prices.
- Table fish. Farm guidance treats a trout as table size from about 250 g. Smaller than that, there is little meat on the frame.
- Pan-sized fish. Commonly around 280 to 400 g. One fish makes one plate, cooked whole or as a pair of small fillets. This is the classic size for a lodge or bistro.
- Larger fish. Market sizes differ a lot around the world: around 450 to 600 g is common in the USA, and 1 to 2 kg in Europe. Larger fish give thick fillets for portioning, curing or a whole fish for the table to share.
Tell us what you plate, a whole fish per guest, a fillet of a set weight, or a shared platter, and we will tell you which fish from the current harvest fits best. If your menu needs one exact size every week, say so up front, so we can plan harvests around your standing order.
For dishes, our recipes page covers smoked trout; fresh trout is at its best simply pan-fried skin-side down, baked whole with lemon and herbs, or grilled.
How much is trout per kg in South Africa?
This is the question most buyers ask first, and there is no single honest number. The price per kg you pay depends on five things:
- Fish size. Larger fish take longer to grow. On published farm figures, growing a trout from 250 g to 500 g takes a further 2.5 to 4.5 months of feed and water. That time shows in the price.
- Whole fish or fillets. A kilogram of whole fish includes head, bones and skin. A kilogram of fillets is meat. Fillets always cost more per kg, but the cost per portion is often closer than it looks.
- Volume. Bigger and more regular orders cost less per kg to pack and deliver.
- Standing order or one-off. A steady weekly order lets us plan harvests and is priced accordingly.
- Delivery. Where you are, and whether you are on an existing run.
Supply also tightens in late summer. In January to March, water temperatures in South African trout areas can rise above 20 °C, which limits trout production across the industry. In those months we look after standing orders first.
Ask for the current wholesale price list and we will send prices for whole fish and fillets at the volumes and delivery area that fit you.
Standing orders and delivery runs
Tell us what you need
Whole fish or fillets, the portion or fish size you want, roughly how much a week, and your delivery address.
Get the price list and run days
We send current prices and the delivery runs that reach you, with the order cut-off for each.
Set up a standing order
A fixed weekly quantity, adjusted when you need to. Most kitchens find this easier than ordering from scratch every week.
Harvest, pack and deliver
Fish are rested off feed for about 3 days before harvest, as is standard practice, then packed on ice and delivered cold on your run.
Runs cover the Mpumalanga Highlands, Mbombela, Johannesburg and Pretoria. See areas served, or the area pages for Johannesburg, Pretoria and Mbombela.
Handling and shelf life
Fresh trout keeps about 10 to 14 days on ice from harvest when it is kept properly cold. Every delivery is labelled with its harvest date. Keep fish on ice or in the coldest part of the fridge, drain melt water, and use the oldest stock first.

Fresh trout, smoked trout or live fish?
Fresh trout is for kitchens that cook. If you want a ready-to-eat product for a deli counter, a breakfast menu or a platter, smoked trout keeps your prep to slicing and plating, and our smoked trout recipes give you starting points for the menu.
If you want live fish to stock a dam or venue rather than fish to eat, you need trout fingerlings.
Questions from chefs and buyers
How much is trout per kg in South Africa?
It depends on what you buy. Price per kg changes with fish size, whole fish versus fillets, how much you order and how often, and where it must be delivered. Fillets cost more per kg than whole fish because you pay only for the meat. Rather than quote a figure that may not fit your order, we send a current price list for your volumes and delivery area.
How much is 1 kg of trout?
For whole fish, a kilogram is a few pan-sized trout or part of one larger fish, depending on the size you choose. For fillets, it is all edible meat. That is why the per kg price differs so much between products and suppliers. Ask for our price list and we will show whole fish and fillets side by side.
How long does fresh trout keep?
Properly chilled fresh trout keeps about 10 to 14 days on ice from harvest. In practice, quality depends on how cold the fish is kept at every step, from our cold room to your fridge. We tell you the harvest date with each delivery, so you can plan your menu and stock rotation around it.
Do you deliver to Johannesburg and Pretoria?
Yes. Fresh and smoked trout go to Mbombela, Johannesburg and Pretoria on scheduled delivery runs, and to customers across the Mpumalanga Highlands. Tell us your address and the days you can receive deliveries, and we will tell you which run fits. See areas served for the full list.
Can I buy fresh trout as a private customer?
This page is for trade buyers, and fresh fish is sold in trade quantities on scheduled runs. Private buyers are better served by our smoked trout retail packs or a visit to the farm. If you are organising an event and need a larger one-off order, ask us and we will see what we can do.
Is farmed trout a good source of omega-3?
Published values for farmed rainbow trout give about 0.73 g of EPA and DHA combined per 100 g raw, with 19.9 g of protein and 15.9 micrograms of vitamin D. Those are typical figures for farmed rainbow trout in general, not a lab test of our fish, but they are a fair guide for your menu notes.
